18 Nov Sweet Potato Casserole
A traditional family favorite recipe. Yes leave it to southerners to take something as wonderful as a sweet potato and turn it into something that should be packaged and put in the check out lane with the rest of the candy. But boy! Aint it gooooood!!
Sweet Potato Casserole
- 3 c. mashed, cooked sweet potatoes
- 1/2 c. sugar
- 1/2 c. melted butter
- 2 eggs, well beaten
- 1 t. vanilla extract
- 1/3 c. milk
Topping:
- 1 c. firmly packed brown sugar
- 1/4 c. all-purpose flour
- 2 1/2 T. melted butter
- 1/2 c. chopped pecans
- 1 c. Mini-Marshmallows
Combine first 6 ingredients. Mix well and spoon into a 2qt. casserole dish. To make the topping, combine topping ingredients. Mix well and sprinkle on top of potato mixture then finish with a layer of mini-marshmallows.
Bake at 350 for 25 mins.
